Long before supermarkets, cafés and sourdough bakeries, there was the bannock.
Simple, nourishing and made from ingredients close at hand, bannocks sustained Highland families for centuries. Mixed in wooden bowls beside peat fires and cooked on griddles or stones, they were the daily bread of crofters, shepherds and travellers moving through the glens. Every family had their own variation. Oatmeal was often the staple grain of the Highlands, hardy enough to withstand the weather and poor soils. A handful of herbs gathered from the garden, a little butter, fresh eggs when the hens were laying, and perhaps a precious piece of cheese transformed a humble bannock into something worthy of sharing. Food in the Highlands was never simply fuel. Hospitality was woven into the culture. A traveller arriving at the door could expect warmth, shelter and something to eat. The old Norse Hávamál reminds us: "Fire is needed by the newcomer whose knees are frozen; food and dry clothes are needed by the traveller." At Wester Auchraw Croft, our savoury herb and cheese bannocks are inspired by this tradition. Fresh chives, thyme and wild garlic from the garden find their way into the dough, carrying the flavours of the season. Served warm from the oven, they pair beautifully with thick sour cream, wild smoked salmon and a spoonful of Japanese caviar for a contemporary Highland indulgence. For something closer to the crofting table of old, we love them alongside fresh eggs gathered from the garden hens, softly boiled and still warm from the nest. It is a simple pleasure flour on the hands, herbs from the garden, and the aroma of baking filling the kitchen. In a fast-moving world, perhaps this is why the bannock endures. It reminds us that some of the finest things are also the simplest. A recipe carried through generations, shared around countless tables, and still bringing people together today.
